Sweet Taste Of Paradise
Even though the Club is closed to guests during the off season, the kitchen is open year-round. We have been feeding our hard working (and hungry!) staff working to transform Pine Cay. If you have ever stayed at The Meridian Club, you will agree with them in saying that the cinnamon rolls are some of their favorite treats.
The kitchen wakes up before the sunrises to produce freshly baked pastries every breakfast. While Pine Cay finishes up construction and tidies up the island you can create a taste of your favorite peaceful island in your own kitchen, until you meet them here again.
Do not be intimidated by the long list of ingredients, it is rather simple (and well worth it) to accomplish!
- ¼ cup warm water
- 1 Tablespoon active dry yeast
- 1 Tablespoon sugar
- ¾ whole milk, gently warmed
- ¼ cup canola oil
- 2 ½ cups all-purpose flour
- ¼ tsp salt
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1 tsp cinnamon
- ¼ cup butter, melted
- 2 cups powdered sugar
- 1 tsp vanilla extract
- ¼ cup heavy cream, or until desired consistency
In a medium sized bowl, sprinkle the dry active yeast and 1 TBS of sugar over the warm water. Let sit for 5-7 minutes, or until bubbling. Add the warm milk, canola oil, flour and salt. Knead together with your hands until smooth. Cover with plastic wrap and leave in a warm place. Let double in size.
For the filling, combine the sugar, brown sugar, cinnamon and melted butter. Roll the dough out into a rectangle. Sprinkle the filling evenly over the rectangle. Roll up and cut into 6 even pieces.
Place each piece, spiral facing upwards, on a parchment lined baking sheet. Cover until doubled in size. Bake at 350 degrees until lightly golden. Let cool slightly.
Whisk together the powdered sugar, vanilla extract and heavy cream. You may want to add some more cream to reach your desired consistency. Drizzle over cinnamon rolls.
Now pick one up in your hands, close your eyes, and take a bite while imagining your toes in the sands of Pine Cay.
